How To Decorate Cookies for Valentine's Day

This year I decided to keep things simple with my Valentine’s Day cookies. I used only flood consistency royal icing and a round decorating tip 2. This is unlike my Valentine’s Day cookies from past years, which have involved many icing consistencies, colors, decorating tips and even some fondant! How to use the royal icing wet-on-wet technique on a cookie

The wet-on-wet royal icing technique is a simple one, but you have to move quickly in order to achieve the desired effect. This technique is called wet-on-wet because the designs (roses in this case) are applied while the base layer of icing is still wet, which allows the design to dry flat and smooth. If you don’t pipe your designs in time, the base layer of icing will start to dry and you’ll end up with wrinkles and bumps. You’ll usually about 5 minutes from the time the base layer is piped until it starts to crust. How To Make A Marbled Royal Icing Design on a Cookie

Decorating with marbled icing is a fun and simple way to create an impressive looking design. These bright cookies would be perfect for a poolside party! I used my Orange Vanilla Spice recipe for this cookie, which is available in my tutorial shop. You’ll also find lots more video tutorials there that will teach you the basics of royal icing along with some more advanced techniques. For my bright color palette, I used Wilton gel pastes in sky blue, leaf green violet, rose and lemon yellow. As you’ll see in the video below, the marbled icing technique is done in flood consistency royal icing and the border is then piped using stiff consistency royal icing. Read this post for information on royal icing consistencies. I’m decorating on a 3×3″ cookie, which is my standard size. You can customize this design with as many or as few colors as you’d like. How To Make Leopard Print Cookies With Royal Icing

This leopard print pattern is made using the wet-on-wet royal icing technique. It’s really simple to do! Here’s what you’ll need for this project: 3″ round cookies (my Orange Vanilla Spice recipe is available in the tutorial shop) Flood consistency royal icing in brown, dark brown and black Scribe tool 12″ decorating bags Decorating tips 1 and 3 Colors: Light and Dark brown: Wilton Brown + a touch of Juniper Green Black: Americolor Super Black Pink: Wilton pink Once the icing is completely dry, you can leave them the way they are and package them in cello bags. I think they look very chic! Or, if you want to dress them up, you can add more decorations at this point. Here are a few examples of what I did: I used white, pale pink and gold icing to add borders, pearls and chains. Read this post for step by step instructions on how to pipe a royal icing gold chain. The lacy border is done with the brush embroidery technique. Start by using stiff consistency icing and a tip 2 to pipe a ruffle around the edge of the cookie. Then, using a damp square tip brush, pull the icing inward. There is a video with full instructions on brush embroidery available in my tutorial shop. The ruffle border is piped using stiff icing and a petal tip 104. With the wide end on the cookie and the narrow end facing out, use a zigzag motion to apply the ruffle. You can add a bead border to the inside edge with a tip 2. Visit my tutorial shop for videos on how to pipe ruffles and on how to pipe a bead border. I painted the bead border and the edge of the ruffle using a mixture of gold pearl dust and alcohol. Read this post for more information on painting with gold. You can use the bead border technique to add pearls. The heart charm was piped using flood consistency icing and a tip 1. I used my scribe tool to help form the shape of the heart. How To Pipe Filigree Using The Royal Icing Wet on Wet Technique

Filigree is one of my favorite designs to make. There’s something about it that I find very relaxing. To make these cookies, you’ll need flood consistency royal icing in two colors of your choice. The beige color is made using brown with a little bit of green to neutralize it and the blue is made using royal blue with a touch of black. Use a tip 3 to flood the cookie and a tip 1 to pipe the design. You can find these products on my recommended products page. You can add a bead border using a tip 2 and stiff consistency royal icing. This is a demonstration of how to pipe filigree using flood consistency royal icing on a sugar cookie. How To Decorate a Beach Cookie Using Royal Icing

I’ve been having a lot of fun lately using different techniques to create textures and effects on my cookies. These beach cookies were no exception! Here’s my beach-y color palette. I mixed a teeny tiny drop of golden yellow into the white to get the off-white color that’s shown all the way to the left. Then there’s white, red mixed with a little touch of black, brown with a little bit of green to neutralize it*, and sky blue. *I usually add a little green to the brown because I find that brown comes out too pink if you use it in medium or light shades. The cookie shown here is smaller than my usual size. It’s 2-1/2 x 2-1/2″ rather than 3×3″. I used my Orange Vanilla Spice recipe, which is available in my tutorial shop along with my royal icing recipe. You’ll also find lots of useful video tutorials there including How To Make Royal Icing, Flooding With Royal Icing and Cookie Decorating Basics. Start out by covering about 2/3 of the cookie with brown flood consistency icing and a tip 3. Leave a wavy edge for the water on the shore. Use a scribe tool to help evenly distribute the icing. Immediately fill in the rest of the cookie with blue flood consistency icing and a tip 3. Again, use a scribe tool to help evenly distribute the icing. This will also help to get rid of any air bubbles. Allow the icing to dry 8-12 hours. Then, using the same brown flood consistency icing, pipe a few lines using a tip 2. Then, use a short, stiff brush to dab the icing to create the sandy texture. This is the same process that I used in the teddy bear cookie tutorial. Just do one half at a time so that the icing doesn’t start to dry before you have a chance to dab it. While the icing is still wet, you can “draw” in the sand. Use the back of the brush to create a design. To create the waves with the brush embroidery technique, use a tip 1 and stiff consistency royal icing to pipe a line with a zigzag motion along the edge of the blue icing. Work with small sections so that the icing doesn’t dry before you brush it. Use a damp square tip brush to bring the icing toward the bottom edge of the cookie. There’s a video tutorial in my shop with full instructions on brush embroidery. Make 2 or 3 layers of waves using this technique. You don’t have to wait for them to dry in between. Then, using the same stiff icing and tip 1, pipe tiny dots on the edges of the waves to create a foamy effect. If you’d like to add a crab, use the red icing in flood consistency and a tip 1. Pipe something that looks sort of like an apple for the body and the use scribe tool to help shape it. Then add legs and claws. Use the scribe tool to make the claws pointy. Then add little dots for eyes. To give the water a wet look, mix a little bit of alcohol or flavored extract with some corn syrup. I use about a teaspoon of alcohol per tablespoon of corn syrup. My preferred alcohol is Bacardi 151. Use a soft round brush to apply the corn syrup to the icing.* Make sure that your brush embroidered waves are nearly dry, or else you’ll crush them with the glaze. 30 minutes of drying time before adding the glaze should be enough. Put the cookies in front of a fan just to be sure. *A note about using corn syrup glaze: This glaze will dry to the touch after several hours, but it will always remain somewhat soft underneath the surface. I’ve tested this glaze for shipping durability and the results were mixed. On certain cookies, the cellophane bags stuck to the glaze. On the cookies with raised decorations, however, the bags were kept off of the glaze and they survived the trip just fine. So, if you are going to be shipping these cookies, make sure to add some raised decorations, such as the shell border. To make a shell border, use stiff consistency icing and a star tip 16. This is where I used the off-white color icing. I left a space in between each shell so that I could add pearls in between. The pearls are made with stiff consistency white icing and a tip 3. Allow the icing to dry for another 4-6 hours before handling the cookies. Learn how to create a beach scene on a cookie using royal icing! How To Decorate Owl Cookies!

These brightly colored owl cookies are made from one of the many cookie cutters that I picked up during my last trip to NY Cake in Manhattan. On a side note, I recently found out that this pretty paper doily was designed by my cousin Cullen at Anna Griffen. Pretty neat, right? Next to decorating cookies, making dessert look like savory food is one of my favorite things to do, which is why this April Fools’ Day breakfast made entirely of cake, cookies, and frosting was so much fun for me to create! I don’t know why, but this amuses me more than most things. Breakfast foods are my favorite foods of all! Going to the diner and having breakfast available to me at any time of the day is something that makes me very happy. It only made sense for me to do a project that combines two of my favorite things: cookies and breakfast. These cookies were made using my Orange Vanilla Spice recipe (available in my tutorial shop) and iced entirely in flood consistency royal icing. This post has more information about the three icing consistencies that I use most often. I used both Americolor and Wilton gel pastes for this project. The bacon red is a mixture of Americolor tulip red with a touch of black. The egg yolk yellow is Wilton lemon yellow with a little bit of golden yellow. How To Make A Cookie Bouquet!

If you follow me on Instagram, you’ve probably seen a few of the wedding projects that I’ve been working on lately. All of those fabric flowers and coffee filter roses inspired me to make a royal icing “ribbon rose” cookie bouquet. Here’s what you’ll need for this project: Six 1-1/2″ round cookies (you can find my Orange Vanilla Spice cookie recipe in my tutorial shop) Stiff consistency royal icing in green, peach, pink and white Tips 352, 101 and 12 Wilton cookie sticks Soft round brush (I like the one from the new Wilton set) White pearl dust Alcohol or flavored extract Paint palette or small dish for mixing pearl dust Colors: Peach: Wilton Buttercup Yellow + a touch of Aster Mauve from the Garden Tone Set Pink: Wilton Aster Mauve + a touch of Buttercup Yellow Green: Wilton Juniper Green, also from the Garden Tone Set Start out by piping leaves all the way around the bottom edge of the cookies with green stiff consistency icing and a tip 352. Pipe a mound of white stiff consistency icing with a tip 12. Place a cookie stick into the mound of icing and allow it to dry completely (I let mine sit overnight just to be safe). Now the cookie sticks can be used the same way you would use a flower nail. While spinning the cookie stick between your thumb and forefinger, pipe a ruffle all the way around the edge of the cookie with pink (or peach) stiff consistency icing and a tip 101. The wide end of the tip should be on the surface of the cookie and the narrow end should be facing up and out. Continue to pipe ruffles until you reach the center of the cookie. These ruffles could be piped in buttercream rather than royal icing if you prefer. Fill the empty space in the middle with a dot of white stiff consistency icing, using the number 12 tip. If you’d like to add a pearl finish to the flower center, mix a little bit of white pearl dust with a few drops of alcohol or flavored extract in a palette or small dish. Apply it to the white icing using a soft round brush. For more on this technique, read this post on painting with pearl dust. Arrange the flowers in a vase or jar filled with granulated or sparkling sugar. The sugar helps to hold the flowers in place and allows you to easily rearrange them. I wrapped this mason jar in burlap and lace (Pinterest wedding idea, of course) to display my cookie bouquet. How To Create a Cracked Glaze Effect on a Cookie Using Royal Icing

This “cracked glaze” technique is something that I thought of a while back when I accidentally stuck my finger in icing that was dry on the surface, but still wet underneath. The cracked pattern that resulted from my clumsy move reminded me of those antique pottery pieces with very fine cracks in the glaze. A few months later, I was playing around with ways to recreate that effect. The project changed quite a bit from what I thought it would be originally, as you’ll see in this tutorial. These cookies involve a lot of decoration and, depending on the type of “glaze” you are using (more on that in the video below), they are not ideal for shipping. I created this design with the idea of an elaborate display cookie, rather than something you’d eat. I think they would be best arranged on a pretty platter and used as a display on a dessert table surrounded by mini cookies and other sweets, or as a centerpiece for an Easter or Mother’s Day brunch. These are the tools you’ll need for this project. As you’ll see in this video tutorial, I started out with a cookie that was iced in flood consistency royal icing and allowed to dry overnight. Visit my Tutorial Shop for a video with full instructions on flooding with royal icing. You’ll also need a scribe tool, a soft round brush and an angled brush, both of which come in this Wilton 3 piece Decorator Brush Set. Any dark shade of petal dust will work for this method. I am using CK products petal dust in mushroom, but you could try these FDA approved dusts from NY Cake. I also tried using pearl dust, but it wasn’t fine enough to get into those small scratches in the surface of the icing. You can also add floral details under the glaze by first using the wet-on-wet technique, and then doing the cracked glaze after the icing dries. Read this post for a tutorial on making tiny roses in royal icing using the wet-on-wet technique. Once you’ve finished glazing your cookies, paint the exposed edge of the cookie with a mixture of gold pearl dust and alcohol. Read my post on painting with gold pearl dust to learn more about that. The roses shown here were piped using a petal tip 104 a day in advance and allowed to dry overnight. There is a video with full instructions on piping roses and leaves available in my Tutorial Shop. The colors I used for the roses and leaves are from the Wilton Garden Tone 4-Piece Colors Set, but you can create these colors on your own by adding a touch of brown or black to your pinks, blues and greens. Pipe a mound of stiff consistency icing where your roses will be placed. I’m using a leaf tip 352, but only because it’s convenient, since I’ll be piping leaves later. Press the roses into the mound of icing. Add leaves using the leaf tip 352. I also added a little gold paint to the edges of the roses. How To Make A Chevron Pattern Cookie Using Royal Icing And Nonpareils

After going through lots of ideas of what to do with the beautiful custom made cookie cutter that I received from a friend in Hong Kong, I decided to go with a simple chevron design. I created a little video to show I made these cookies using some piping gel and rainbow nonpareils. I started out by icing the cookies with flood consistency royal icing. There is a video with full instructions on this method in my tutorial shop. Once the icing was dry, I applied piping gel over a chevron stencil. To make the stencil, I traced a chevron pattern onto a sheet of acetate paper using an edible ink marker. That way I didn’t have to worry about any permanent marker ink getting all over the cookies or the brush. Then, I cut the stencil using an exacto knife. How To Decorate Cookies To Look Like Fall Leaves!

I made these fall leaves cookies for my dad’s birthday, which happens to be during the most colorful time of the season here in upstate New York. For products used in this and other tutorials, visit the recommended products page. I decided to paint directly onto the cookie rather than icing it first, because I liked how the texture of the surface made the leaf look more natural. My Orange Vanilla Spice cookie recipe is available in my tutorial shop. To paint the leaves, I used 4 different gel paste colors and mixed them with a few drops of Bacardi 151. This is the same process that I use for painting with gold luster dust. I used Wilton lemon yellow, Americolor tulip red, Americolor chocolate brown and Wilton juniper green from the garden tone set. Once I painted the cookie, I piped the veins with a tip 1 and medium consistency royal icing. I allowed the icing to dry for about 2 hours, then painted the veins with a mixture of gold dust and alcohol. Then I added a thin line of gold all the way around the edge of the cookie. These fall leaves cookies would be perfect for a Thanksgiving dessert table! Light and crispy meringue cookies are so simple to make and they taste delicious! Meringue Cookie Recipe: 1/2 cup egg whites (about 4 eggs) 1 cup white granulated sugar 1 teaspoon of vanilla extract (or experiment with other flavors!) Gel paste food coloring (optional) Instructions 1) Preheat oven to 175F. 2) Separate the egg whites from the yolks while eggs are cold. Allow egg whites to reach room temperature. 3) In a mixing bowl, combine the room temperature egg whites and the white granulated sugar. Whip them together until they are frothy. 4) Add vanilla extract and continue to whip the mixture on high for approximately 10 minutes, or until it is shiny and stiff peaks form. 5) **Optional** To make colorful meringues, gently old in gel paste food coloring. Gently fold in the food coloring. 6) Spoon golf-ball sized amounts of the mixture onto a baking sheet covered with a layer of parchment paper. 7) Bake at 175F for about 2 hours, or until the meringues are dull and dry to the touch. How To Make Speckled Egg Cookies

I made these speckled Easter egg cookies as part of a collaboration with some of my Dessert Network partners, Julia M. Usher, Montreal Confections, Haniela’s, and Pink Cake Princess. This design is really simple to recreate. Here’s what you’ll need for this project: Roll out cookie dough (my Orange Vanilla Spice cookie recipe is available in my tutorial shop) Egg shaped cookie cutter Flood consistency royal icing in Wilton delphinium blue from the garden tone set Round decorating tip number 3 Scribe tool Brown gel paste food coloring Stiff brush Alcohol or flavored extract To make my splattering color mixture, I used Bacardi 151 as the liquid to mix with my brown food coloring. I always use Bacardi 151 when painting on royal icing because of its high alcohol content. How To Make Grill Cookies Using Royal Icing

I think these grill cookies with tiny cheeseburgers and shish kebobs would be a fun dessert to have at a summer cookout. This entire project is done in flood consistency royal icing. You can learn all about making and using flood icing in the video, Flooding With Royal Icing, which is available in my video tutorial shop. You’ll also find my cookie and royal icing recipe there. I used black mixed with a little bit of yellow to achieve the gray. I actually didn’t have any orange on hand, so I mixed a little red with some lemon yellow. The light brown color used for the skewers is brown with a small touch of green added to neutralize it. A fun project for summer!
