This makes the nutrition way higher than convectional dairy. Organic yogurt has 62% more omega 3 fatty acids than traditional yogurt, bc corn and soy inhibit omega 3 productions. When you cook more at home, you're eating healthy and saving money. Cooking at home is a great date idea and a very special way to treat friends and family. As you cook more, it will become easier and quicker. I also show valuable cooking tips for freezing, preserving, and storing food. To get started, you’ll need the best quality milk you can find: organic, non-homogenized whole fat milk. And you’ll need a probiotic starter. You can buy the bacteria or you can use a few tablespoons of store-bought plain yogurt. Make sure it has no added sugar and only live cultures - they have to be alive to work. You can use regular yogurt, but Greek yogurt gives a more tart result. Start by slowly heating the milk on the stovetop. Use a low medium heat, so set your dial to medium, then a touch lower. As it heats, you’ll notice slight movement in the milk and then a skin forming on top. Leave it there. Basically don’t touch it for 45 minutes. It should take about 45 minutes for the milk to reach the point we’re going for. Some recipes will say to reach 180 degrees, but I just wait for the milk to nearly bubble over the edge of the pot. The slower the milk reaches this point, the more velvety your yogurt. Then turn off the heat and start pulling back the skin to release the heat as it cools. About this time, I’ll also turn on my stove to its lowest heat setting which is 170 degrees. We’re going to let the milk cool until the tip of your pinky finger can stay in the milk for 3 seconds without burning. Other recipes will say the milk should cool to about 105-115 degrees. Now it’s time to mix in the probiotic or the yogurt starter. For half a gallon of milk, 4-5 tablespoons of yogurt work for me. I usually save some yogurt from my previous batch and freeze it. It should be good for a couple months like that. Stir in a little hot milk into a separate bowl with the yogurt. Then pour the little mixture into the rest of the milk. Transfer everything to a bowl or storage container that holds heat well. We want to create an environment that holds a low level of heat for the bacteria to feed and grow but we don’t want to cook the milk anymore because that will pretty much kill the bacteria. So use a ceramic or even glass bowl, I use my enamel-coated aluminum stock pot for this part. And find a warm place in your home or just use a warm oven. The ultra traditional way of making the yogurt is to coddle your container with a blanket - so literally covering the container and then wrapping it with a blanket, leaving it in a warm spot in the house, like in front of a heater, for 8-10 hours. Or, use a warm stove and leave the light on. Turn off the oven when you put in the yogurt. Your yogurt should get as much sleep as you do, so 8-10 hours. Now pull it out of the oven. It should smell like yogurt and the yogurt should pull away from the side of your bowl. I scoop off the cream layer on top because it's very lumpy, but you don't have to. Now move it to the fridge to stop the bacteria from growing but to continue setting the yogurt. After 12 hours or so, you can strain it to make thick yogurt, what we know as Greek yogurt. To strain, set a colander over a bowl, and line it with a double layer of cheesecloth. Pour in the yogurt and let the liquid whey drip out overnight. Set a plate on top of the yogurt while it drips overnight or 10-12 hours. Keep the liquid whey. It's is the original probiotic drink - zero calories with tons of protein and calcium. They call it “nature’s gatorade.”

The count 5 rule is an easy, foolproof, and time-tested method for making plain and strained yogurt. Making yogurt at home turns out to be very economical and gives ample options for the kind of milk used. Ingredients: Whole Milk (3 cups) Yogurt (3 tsp) Notes: 1. Make sure that the yogurt(culture) you use has live, active culture. 2. The amount of culture required varies with the temperature of the place where you set the yogurt. So, not everyone will need to use 3 tsp for 3 cups of milk. At my home, a temperature of around 70 deg F is maintained in the house. The kitchen tends to get warmer because of all the cooking. The oven is warmer than the kitchen because of the heat from gas stove above the oven. And then, I put the bowl in an insulated container. This is how I maintain an optimum temperature for setting the yogurt. One may enclose the bowl in a warm cloth, like a shawl or a woolen sweater and put it inside a cabinet. This method is often used in India where a constant temperature is usually not maintained in the house. In such a place, the amount of culture used varies drastically with the outside temperature; varying from using a few spoonfuls of whey in Summers to tablespoons of firm yogurt in the Winters. 3. If you are setting yogurt for the first time, start with little quantity of milk and use 1 tsp yogurt as culture for 1 cup of milk. If the yogurt is set but is not very firm then use that yogurt but 1 1/2 tsp as culture for the 2nd cup of milk. If in the first attempt the yogurt is set very quickly, say 2 hours but gives out lots of whey or is sour, then use lesser quantity of culture for the 2nd cup of milk. Now repeat the same for the 3rd cup of milk. Using this technique, figure out the amount of culture required for setting yogurt at your place. Only then increase the amount of milk and use proportionate amount of culture. Yogurt is way more than a breakfast food. In this episode see how it becomes the perfect marinade for poultry or fish as well as the base for a succulent, creamy sauce that has all of the flavor and texture of a classic cream sauce with all the benefits of yogurt. For the marinade 1 large chicken breast (about 1/2 pound) 1/2 cup plain, whole milk yogurt 2 tablespoons olive oil 1 teaspoon dried oregano zest of one lemon 1 teaspoon paprika 1/2 teaspoon kosher salt 2 grated garlic cloves Freshly ground black pepper, to taste 1 tbsp olive oil (Separate) For the Greek sauce 4 tablespoons greek yogurt (regular or light) 1 tablespoons milk 1 tablespoon cider vinegar 3/4 teaspoon sugar 1/8 garlic powder Squeeze of lemon juice 1 tbsp minced dill Kosher salt and freshly ground black pepper For Serving 1 tomato, diced 1/2 cucumber, diced Pita bread, for serving Ingredients For the marinade, cut the chicken breasts into bite-sized cubes. In a medium-sized bowl, whisk the yogurt, olive oil, oregano, zest, paprika salt, and pepper until combined. Add the chicken and marinate for at least two hours, but overnight if possible. After Marinating, wipe off the excess marinade. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 3 minutes without stirring. Give a quick toss and continue cooking for another 3 minutes, or until the chicken is cooked through. For the Greek sauce, mix together all of the ingredients and refrigerate. Adjust seasoning according to taste before serving. To assemble, combine the chicken with desired amount of Greek Sauce, tomatoes, and cucumbers. Add salt and pepper to taste. Pile onto a piece of pita bread, fold like a taco or assemble on a plate as a salad. Yogurt making is not rocket-science but it is science and very simple science. Yogurt /Curd or Greek Yogurt can be made at home very easily and at a fraction of the cost and to your taste. Follow the steps, make it at home and you'll figure out how simple it is. Ingredients: Milk -- 8 cups Starter -- 2 heaping tbsp Method: 1. Boil Milk on a medium high flame, stirring occasionally to avoid burning. 2. Once the Milk comes to a boil, reduce flame to a simmer and cook for another 5-6 minutes. 3. Turn off the stove and let the Milk cool down to lukewarm. 4. Once it's lukewarm, add in the starter and mix well. 5. Transfer into container(s) to set the yogurt. 6. Keep in a warm place and allow the yogurt to set. 7. Setting time may vary depending on the size and material of container, climate and how warm you keep it. 8. We kept it in the oven, with the oven lights on but the but switched off, for 8 hours. 9. Transfer the Yogurt to the fridge and allow it to firm up for atleast a couple of hours and then it's ready to serve. For Greek Yogurt: 1. Take a Paneer Cloth, wet it and squeeze the water. 2. Spread it over a jug (if you want to save the whey) and pour the Yogurt into it. 3. Make a bundle and tie the opposite ends and hang from a ladle. 4. Allow the Whey to drip out until the yogurt is reduced to half. It will take upto 2 hours. 5. Open the parcel and transfer the Yogurt to a container and store till needed. Yogurt is so easy to make and you can save a few bucks making it yourself! No special equipment or starters. All you need is some milk, a cooler, a thermometer, and some store-bought yogurt to make your first batch. You can make additional yogurt by saving a cup from each batch you make. There is also a special note on buying heirloom yogurt cultures. At the end, there is also my favorite yogurt recipe. How to Make Yogurt - 3/4 Gallon of Milk (pref whole milk, not ultra-pasteurized) - 3/4 Cup Store-bought Yogurt Starter (Stonyfield Organic Whole Plain works great) Slowly heat milk to 160 degrees*. (for raw milk heat to 180 degrees). Pour into quart mason jars. Allow to cool to 110 degrees*. Add 1/4 cup of store-bought yogurt (or previously made yogurt) to each jar. Gently stir and add tight lids. Fill water cooler with water that is 110 degrees* and completely submerge jars for 5-8 hours. The longer the more tart! After 5-8 hours, check to see that yogurt pulls away from jars. If so, it's ready! Place in refrigerator to cool and thicken a bit or you can strain through a muslin or linen napkin for 1-2 hours to thicken it even more. Save some yogurt from this batch to make the next batch. You can keep making yogurt from previous batches for about 5 times before you need to buy a new store-bought starter. Make a new batch every 7 days to keep yogurt starter active. INGREDIENTS: BASE: * 1 1/2 Liters of Filtered Cool Water * 2 1/4 Cups Full Cream Powdered Milk * 1/2 Match Head Size Piece of Y450B Culture (a mild acidifying Lactobacillus delbrueckii ssp. bulgaricus and a low content of fast acidifying Streptococcus thermophilus). (SCD compliant) OPTIONAL: * ProBiotic Culture - As much as 3 grains of sugar worth of Lyofast ABC 1 (Lactobacillus Acidophilus (lactic acid bacteria) and Bifidobacterium) - non SCD compliant * 6 drops Calcium Chloride Solution - Adds back naturally occurring salt in fresh milk * 2-3 Tablespoons Caster Sugar - non SCD compliant OPTIONAL: * If you want to use whole milk, buy Pasturised and in-homogenised milk if you can get it, otherwise homogenised will also do. Heat milk to about 90Deg C in a double boiler if you can get one, otherwise be careful with the heat and stir constantly so as not to scald the milk. Hold at 90 Deg C for about 10 minutes then cool in a sink of cool water to less than 40 Deg. Be sure to allow the milk to cool to less than 40 dec C before adding culture, or the culture may be destroyed by the heat. If using fresh milk, you should also still use the Calcium Chloride natural salt f you can, because store bought milk is not the same as farm fresh. If you want extra thick you can add half a cup of powered milk to your fresh milk. More Instant Pot videos: https://www.youtube.com/playlist?list=PLzYbU176GYmL7EtaA1-xhqBFEm7Qptxno WHAT YOU'LL NEED: 1/2 gallon milk - I used whole 2 T plain yogurt w/active cultures - I used Fage greek full fat ****** Small bowl 1 Tablespoon Thermometer Dish Strainer Coffee filters / cheesecloth Storage container for final product WHAT YOU'LL DO: * Pour milk into pot * Press "yogurt" then "adjust" so display says "boil" * Place lid on pot * When pot beeps check temperature, should be at approximately 180 degrees. * Remove inner pot, let milk cool to 115 degrees * Combine 2 T plain yogurt with a small amount of heated milk to a smooth consistency, then add to pot and stir gently to combine. * Replace lid * Press "yogurt" and adjust time to 8 hours * After 8 hours, and machine beeps, remove pot and pour yogurt into strainer lined with coffee filters / cheesecloth to separate whey. * Refrigerate and leave until you it reaches your desired thickness (1 - 9 hours) * Put yogurt in container * Enjoy for 7-10 days! ********REMEMBER!!
